This is the kind of recipe that we all need to have to hand when we need one more meal for the week or we just can’t find the time to prepare a bundle of fresh vegetables.
Given the relative simplicity, this is a satisfyingly delicious soup that can be played with, adapted and scaled to feed as few or as many people as needed.
Serves 4 as a main course (that’s 4 very generous bowls or 8 smaller bowls so that everyones can have two).
Ingredients
3 tins tomatoes (whole or chopped)
200g red lentils
3 red onions
1 jar roasted red peppers
Seasoning
Any herbs you have spare
Approximately 1 litre of water (see method)
Method
- Add all of the ingredients to a large saucepan or casserole pot.
- Top up with water until all of the ingredients are covered.
- Bring to the boil and cook for 15-20 minutes, until the lentils are at the texture you like.
That’s it!
Serve with any, all or none of:
- Dukka
- Whole plain yoghurt
- Rye or sourdough bread
